Owner Shunji Hashiba trained at Japan's top sushi restaurant, "Sushi Saito," where his talent was highly regarded. Believing that "freshly caught ingredients have energy that should be shared," he works closely with producers and fishermen nationwide to select the finest ingredients and bring their passion into his sushi. With the idea that "tradition evolves through innovation," he strives to create modern Edomae sushi that highlights the best of each ingredient.
