Eitoman Wagyu is premium Japanese Black cattle raised healthily in a natural environment, strictly free from antibiotics (monensin) and growth hormones. By allowing the cattle to grow at a natural, steady pace, we avoid excessive marbling. The result is a light, melt-in-the-mouth fat paired with the profound umami and aroma of lean beef. We oversee every step from production to preparation. Our chef utilizes a unique "Yakiniku Kappo" style to bring out the distinct character of Eitoman Wagyu. Experience a luxurious moment with our special course, featuring a harmonious blend of our own Wagyu and the finest seasonal ingredients, curated daily based on the freshest arrivals.
