Introduction A Culinary Journey Through Japan’s Seasons — From Tsukiji Outer Market Tonight, our master chefs will guide you on a small journey to experience the four seasons and food culture of Japan. Please enjoy a relaxing time as you savor the blessings of the sea and mountains, prepared with traditional Japanese techniques, served one dish at a time. Menu Items I. The Journey Begins: Kohaku Sushi (Red & White) A dish representing "Kohaku" (red and white), the traditional colors of celebration in Japan. Your journey begins with the deep flavors of Japanese sushi: tuna head meat (noten) and natural red sea bream, served over fragrant red-vinegared rice. II. Sweetness of the Sea: Amaebi (Sweet Shrimp) Fresh sweet shrimp served in its natural form. Enjoy the melting sweetness and the delicate aroma of the ocean. III. A Taste of the Japanese Home: Dashimaki Tamago A fluffy, sweet Japanese omelet infused with rich dashi broth. Served with seasonal fava beans to provide a gentle, comforting taste of Japan. IV. Tuna Cheek Steak A rare cut of tuna cheek meat, seared to aromatic perfection. Experience a meat-like texture combined with the unique umami of premium fish. V. Flavors of Crab Featuring different varieties of seasonal crab, either steamed or boiled to bring out the natural sweetness and aroma of the ingredient. VI. WAGYU Sirloin: Sukiyaki Style A4-rank Wagyu sirloin and mushrooms prepared sukiyaki-style. Topped with airy, whipped egg whites to add a soft and mellow touch to the dish. VII. Tempura: The Art of Japanese Frying Live shrimp, fresh abalone, sweet potato, and seasonal vegetables fried in a light, crispy batter. We take pride in using only the freshest "live" ingredients. Enjoy with tempura dipping sauce or "Yukishio" (snow salt). VIII. Charcoal-Grilled WAGYU & White Rice Wagyu beef slowly grilled over charcoal. Served with pesticide-free rice from Akita Prefecture, polished in-house daily. Enjoy the enhanced umami that only such a simple, high-quality pairing can provide. IX. Duck and Clam Hot Pot A gentle hot pot where the richness of duck meets the savory broth of clams. Finished with "Shiroishi Umen" (short noodles) so you can enjoy every last drop of the flavorful soup. X. Sweets Black bean kinako (roasted soybean flour) ice cream and an "Egg Monaka" wafer sandwich. A relaxing moment with traditional Japanese sweetness. XI. The Finale: Matcha Time We serve "Ousu" (light matcha tea) and Mizu-yokan (soft adzuki bean jelly). Please immerse yourself in the final experience of Japanese tea culture.
