By allowing the cattle to grow at a natural, steady pace, we avoid excessive marbling. The result is a light, melt-in-the-mouth fat paired with the profound umami and aroma of lean beef. We oversee every step from production to preparation. Our chef utilizes a unique "Yakiniku Kappo" style to bring out the distinct character of Eitoman Wagyu.
