At “Shinoda,” the chef builds strong relationships with trusted fishermen, farmers, and other producers. For example, he often joins a well-known Oshima fisherman, Junichi Fujimoto, on fishing trips to carefully select the best catch. The same care is taken with vegetables and river fish. The chef chooses ingredients he truly believes in and prepares them without being limited by traditional styles. By working with the best local producers, we bring out the natural flavors of Ehime’s seasonal ingredients with creativity and care.
