Our chef personally selects the freshest seasonal ingredients from Ishikawa and across Japan, creating dishes that highlight the beauty of each season. Inspired by Japan’s 72 micro-seasons, each course is prepared perfectly with creativity and respect for tradition, bringing out the full flavor of every ingredient.
